Honey Chicken


This delicious chicken dish is very loosely adapted from a recipe on Allrecipes. The original recipe is intended for grilling kabobs (which would be AMAZING I think) but I wasn't going to deal with the grill tonight! So I tweaked it and baked it instead.

Honey Chicken

1/2 c honey
1/2 c low-sodium soy sauce (may double this next time)
1/4 c canola oil (I'd cut this in half or eliminate all together)
1/4 tsp ground black pepper
2 cloves garlic, minced
4 boneless, skinless chicken breasts
2 red bell peppers (cut into 1in pieces)
4 sm onions (cut into 1in pieces)
4 sm potatoes (cut into 1in cubes) - going to use sweet potatoes next time!

Whisk together honey, soy sauce, oil, pepper, and garlic. Marinate chicken in sauce for at least 2 hours. Mix with veggies in a large lasagna pan and bake at 350 for half an hour or until the veggies are done.
