When Your Kitchen Hates You


You know, my friends are always saying they don't believe I could make a bad meal or telling me about some disaster but that they bet I never have that happen, etc. I am here to tell you, friends, that's a load of crab. ;-)

There are days when my kitchen hates me, things attack me, and appliances mock me.

Today was one such day.

After a delightful day with my mom, I came home to make grilled salmon and blue cheese coleslaw. When I pulled the salmon out of the freezer I discovered that the package had a hole in it and the fish was all bad. Ok.... plan b. Baked chicken. When I tried to make the coleslaw the piece I needed for my food processor wouldn't work. I sliced my thumb open on a deli ham container, one of the fridge shelves collapsed sending bottles everywhere, a key ingredient I KNOW I bought was missing, etc. It happens to us all. Those days when everything goings awry - Butlers' Law (formerly known as Murphey's) works against you. :-P When this happens my suggestion is throw a tantrum. No I mean it. Slam doors, growl, etc. It will make you feel better! Shoot, I looked and sounded 4 yrs old during this particular episode. Then, when you have that out of your system, take a deeeeeeeeep breath and start again. Be gracious with yourself (and merciful to your kitchen appliances) and keep going. When you do that, you can make something yummy like this:

Blue Cheese Slaw
(Apr/May '11 Taste of Home - with my own edits)

4 c shredded cabbage
4 c shredded red cabbage
2 c shredded carrots

Dressing:
1 c mayo
2 TBS Dijon mustard
1 TBS stone-ground deli mustard
1 TBS cider vinegar
1/2 tsp celery salt
1/4 tsp salt
1/4 tsp ground black pepper
6 oz crumbled blue cheese
1/4 c minced fresh parsley

In a large bowl, combine cabbages and carrots. In a small bowl, combine mayo, mustards, vinegar, celery salt, salt, and pepper. Pour into cabbage mix and toss to coat well. Add blue cheese and parsley and combine well. Chill for a few hours before serving.

I will tell you, 4 cups is about 1/4 head of cabbage. So unless you have a plan for the rest of it, buy it pre-shredded! Also, this says it serves 10, but I'd say 12-14. It's a lot of food!
