Blackberry Buttermilk Bundt with Orange Glaze

I got this recipe from my aunt and decided to make it for a dinner with my grandparents. It looks and smells AMAZING and it tastes even better. It has a very unique flavor and wonderful texture. The buttermilk adds to the flavor.


Blackberry Buttermilk Bundt with Orange Glaze

Cake:
2 2/3 c all-purpose flour                                    1 ¾ c sugar1 TBS baking powder                                       4 eggs, room temp      ½ tsp salt                                                          2 tsp vanilla extract½ tsp baking soda                                             ½ c buttermilk1 c unsalted butter, softened                              2 pts blackberries, rinsed/dried
½ c fresh orange juice                                      ½ c confectioners’ sugar


Orange Glaze:

Preheat oven to 350°. Grease a 2 qt nonstick Bundt pan with butter, then spray lightly with nonstick cooking spray. In a small bowl, whisk flour with the baking powder, salt, and baking soda. In the bowl of an electric mixer fitted with the paddle attachment, clean the butter and sugar at medium-high speed until light and fluffy. Beat in the eggs, one at a time, until incorporated. Beat in the vanilla. Reduce speed to low and mix in half of the flour mixture. Mix in the buttermilk, then the remaining flour mixture. Gently fold in the blackberries with a wooden spoon. Pour the batter into the prepared Bundt pan. Bake until golden brown and a cake tester inserted in the center comes out clean, about an hour. Let the cake cool in the pan for 10 minutes, then invert on a serving platter. Make the orange glaze: in a small sauce pan, whisk the orange juice with the sugar and simmer over low heat until the sugar dissolves. Using a skewer or long, thin knife, prick deep holes all over the surface of the cake. Slowlt spoon half of the glaze over the cake, letting it seep into the holes. Let the cake cool for 20 minutes longer. Spoon the remaining glaze over the cake and let set for 10 minutes. Slice and serve.
